Cook favorite pasta of choice according to package directions until al dente. Reserve 1/2 cup of the pasta water then drain the pasta and set aside in pot.
In a food processor or high speed blender, combine beets, olive oil, garlic powder, ricotta cheese, parmesan cheese, salt and pepper and blend until smooth. Add a few tablespoons of pasta water to make more creamy.
Pour the beet pasta sauce over the cooked pasta, along with a few more tablespoons of pasta water, and stir well to combine.
Garnish with more parmesan cheese and any fresh herbs that you'd like and enjoy.
