Beet Pasta Sauce

This Beet Pasta Sauce is creamy, cheesy and full of health benefits. Comes together in less than 15 minutes and you have a delicious meal for the entire family.

Ingredients

  • 1 pound pasta I like fusilli or penne
  • 2 Tablespoons extra virgin olive oil
  • 1 teaspoon garlic powder
  • 6-8 ounces beets, I like Love Beet cooked and peeled
  • 1 cup ricotta cheese
  • 1 cup parmesan cheese grated
  • 1/2 teaspoon kosher salt
  • 1/4 teaspoon ground black pepper

Instructions

  • Cook favorite pasta of choice according to package directions until al dente. Reserve 1/2 cup of the pasta water then drain the pasta and set aside in pot.
  • In a food processor or high speed blender, combine beets, olive oil, garlic powder, ricotta cheese, parmesan cheese, salt and pepper and blend until smooth. Add a few tablespoons of pasta water to make more creamy.
  • Pour the beet pasta sauce over the cooked pasta, along with a few more tablespoons of pasta water, and stir well to combine. 
  • Garnish with more parmesan cheese and any fresh herbs that you'd like and enjoy.
