Pumpkin Oat Waffles

This time of year calls for all things fall and that means all things pumpkin! They are super healthy, yummy and insanely easy. Add in your favorite toppings to make the perfect breakfast for everyone from babies to adults.

Ingredients

  • 1 cup pumpkin puree make sure the only ingredient is pumpkin, I like Thrive Market brand
  • 1 1/2 cup sold fashion oats
  • 1 cup almond milk could use whole milk or any other kind of milk
  • 1 1/2 tsp baking powder
  • 1 tsp pumpkin pie spice

Instructions

  • Turn waffle maker on and let it get hot while you prep the waffle mixture.
  • Add oats, baking powder and pumpkin pie spice into blender and blend until everything is completely smooth.
  • Add the rest of the ingredients into blender and blend for another 1-2 minutes until everything is well combined.
  • Spray nonstick oil to waffle maker then pour waffle batter (about ⅓ cup depending on the size of your waffle maker) and close until done to your liking. Leave in longer if you like crispier.
