Pumpkin Oat Waffles

This pumpkin waffle recipe is made with simple ingredients and has a perfect pumpkin spice flavor. Made with oatmeal, pumpkin puree, almond milk and pumpkin pie spice, these are a family favorite and suitable for babies and adults alike.

Always great for breakfast but you can also add to school lunches, as an on-the-go snack, or a special “breakfast for dinner” night.

Ingredients and Substitutions

Pumpkin Puree

Old Fashioned Oats

Almond Milk: oat milk, soy milk or regular milk works.

Baking Powder: for fluffy pumpkin waffles

Pumpkin Pie Spice

Instructions:

Step 1: Heat waffle iron while you prep waffle batter.

Step 2: Add oats, baking powder and pumpkin pie spice into blender and blend until completely smooth. 

Step 3: Add the rest of the ingredients into blender and blend for another 1-2 minutes until everything is well combined.

Step 4: Spray nonstick oil to waffle maker then pour waffle batter (about â…“ cup depending on the size of your waffle maker) and close until done to your liking. Leave in longer if you like crispier.

Optional Add In’s

For babies just discovering food, leave these waffles as is. For younger children and adults, get creative! I add peanut butter, chia seeds, a drizzle of pure maple syrup or even Lily’s dark chocolate chips.

Storing and Reheating

Store your pumpkin oat waffles in an airtight container in the fridge for up to three days or three months in the freezer. When ready to reheat, pop them in the toaster oven until desired level of crispyiness.

What if I don’t have a blender? For best results, you want a smooth batter. If you don’t have a blender, you can use a hand-held or stand mixer.

Can I make these into pancakes? Yes, make this recipe into pancake batter in the exact same way. Be sure to spray your pan with cooking-spray to prevent sticking. 

I had to open a can of pumpkin puree, what do I do with the rest?  Use your extra pumpkin puree to make pumpkin muffins, use for a pumpkin pie filling or pumpkin cookies.

Ingredients

  • 1 cup pumpkin puree make sure the only ingredient is pumpkin, I like Thrive Market brand
  • 1 1/2 cup sold fashion oats
  • 1 cup almond milk could use whole milk or any other kind of milk
  • 1 1/2 tsp baking powder
