These cute christmas tree pancakes make breakfast fun! I love seeing their little faces light up on Christmas morning when we make them.

The best part, these little trees get their beautiful green color from baby spinach and not artificial dye. With just a few simple ingredients and a Christmas tree cookie cutter, you can make your very own trees. Themed treats, for the win!

👩‍🍳 How to Make Christmas Tree Pancakes

  1. Preheat oven to 350 degrees.
  2. Add oats, flour, and baking powder into a blender and blend on high pulse until oats are smooth and grain-like, about one minute. Set aside in a large mixing bowl.
  3. Add the rest of the ingredients in the blender and blend from low to high for about 1 minute until well combined.
  4. Pour the wet ingredients from the blender into the bowl with the dry ingredients and stir well to combine.
  5. Pour the pancake mix on a baking sheet laid with parchment paper and use a spoon to gently spread across the entire baking sheet.
  6. Set baking sheet in oven and bake for 10 minutes.
  7. Remove from oven and let cool for 5 minutes.
  8. Once cool, use a tree shape cutter to make trees throughout the entire baking sheet (should make about 12).

🪄 Tips and Tricks

  • Make sure your pancakes are completely cool before you cut them so you get a perfect looking pancake tree.
  • When you cut out the shapes, don’t throw away the scrapes. I save them in a separate glass container and give as a snack.
  • Amazon sells cookie cutters with lots of fun shapes. Make this pancake batter into anything!

👝 How to Store Leftovers

Store leftover pancakes in an airtight container in the fridge for up to three days. To freeze, store in airtight freezer-safe container or freezer bag for up to 3 months.

To reheat, pop them in the toaster oven or gently heat over stove top with some butter.

🤔 Common Questions

Are these gluten and dairy-free?

These are not gluten-free due to the flour. To make gluten-free, use a gluten-free flour such as Bob’s 1:1. Also, make sure to use a certified gluten-free oat. Many are cross contaminated with gluten. To make dairy-free use a non-dairy milk.

Can I use another type of oats?

I suggest old fashioned or quick cooking oats for this. I do not suggest using steel cut as they do not bake as quickly and will not turn out like pancakes.
