Ingredients

  • 4 large eggs
  • 1/2 cup cottage cheese
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon onion powder
  • 1/2 cup shredded cheddar cheese
  • 1/4 cup diced cooked ham or crumbled cooked bacon optional
  • salt and black pepper to taste
  • avocado oil spray or olive oil for greasing air fryer basket

Instructions

  • Preheat your air fryer to 340°F.
  • In a blender, combine eggs, cottage cheese, garlic powder, onion powder, and salt and pepper to taste. Blend until the mixture is smooth and well combined. (If you don't have blender, you may also use a hand mixer).
  • Lightly grease the cavities of the egg bite molds or silicone muffin cups with avocado oil spray.
  • Pour the egg mixture evenly into the greased molds, filling each about 3/4 full.
  • If using ham or bacon, distribute the diced ham or crumbled bacon evenly among the egg-filled molds. Top with shredded cheese.
  • Place the filled molds in the air fryer basket, making sure there is some space between each mold.
  • Cook in the air fryer for about 12-14 minutes or until the egg bites are set and slightly golden on top. You may need to adjust the cooking time based on your specific air fryer model.
  • Once cooked, carefully remove the egg bites from the molds. Allow them to cool for a few minutes before serving.
