Blueberry Yogurt

This healthy and easy Blueberry Yogurt is made with layers of homemade blueberry compote and creamy Greek yogurt. Add optional nuts or granola for a yummy and satisfying crunch. These parfaits are the perfect snack, breakfast or after dinner dessert.

Ingredients

  • 1 cup fresh or frozen blueberries
  • 2 Tablespoons honey or maple syrup
  • 2 cups plain Greek yogurt
  • flaxseed, granola or nuts optional

Instructions

  • If using fresh blueberries, wash them thoroughly. If using frozen blueberries, let them thaw.
  • In a medium saucepan, combine the blueberries and honey (or maple syrup) over medium heat.
  • Cook the blueberries, stirring occasionally, until they release their juices and the mixture thickens into a compote. This usually takes about 5-7 minutes. Remove from heat and let it cool.
  • In small mason jars or serving cups with lids, alternate layers of yogurt and blueberry compote.Start with a layer of yogurt at the bottom, add a spoonful of blueberry compote, and repeat until you reach the top. Top with flaxseed if using.
  • Place the assembled blueberry yogurt in the refrigerator to chill for at least 30 minutes before serving.
