Cilantro Lime Rice Cooker Recipe

Ingredients

  • 1 cup long-grain white rice
  • 2 cups water
  • 1 tablespoon olive oil
  • 1 teaspoon salt
  • 1 lime zest and juice
  • 1/2 cup fresh cilantro finely chopped

Instructions

  • Add the rice and water to a rice cooker and cook as normal.
  • Once the rice is cooked, remove it from the heat. Let it sit, covered, for 5 minutes. Then, fluff the rice with a fork to separate the grains.
  • Drizzle the olive oil over the cooked rice and gently toss to coat. 
  • Zest the lime and add the zest to the rice. Cut the lime in half and squeeze the juice into the rice. Add salt and finely chopped fresh cilantro then mix rice well to distribute the flavors evenly.
  • Taste the cilantro lime rice and adjust the seasoning if needed. You can add more salt or lime juice according to your preference.
