Cooking rice is an art and it’s surprisingly easy to mess up. I made this flavorful rice in a rice cooker to avoid any rice mishaps.
I love the rice cooker method because it takes all the guesswork out of the rice cooking process. It makes perfect rice, every time. Of course, you can make this over the stove if you don’t have a rice cooker.
This fluffy rice is cooked and then drizzled with olive oil, lime juice and cilantro. It’s simple and easy and has so much flavor from a few simple ingredients.
This simple side dish can be served with your favorite Mexican dishes or on its own. Use this for meal prep for the week too! Make a bunch of cilantro rice and use it with Stuffed Bell Peppers (hold the quinoa) or stuff it in Avocado Chicken Rollies.

👩🍳 How to Make Cilantro Lime Rice
- Add rinsed rice and water to a rice cooker and cook as normal.
- Once the rice is cooked, remove it from the heat. Let it sit, covered, for 5 minutes. Then, fluff the rice with a fork to separate the grains.
- Drizzle the olive oil over the cooked rice and gently toss to coat.
- Zest the lime and add the zest to the rice. Cut the lime in half and squeeze the juice into the rice. Add salt and finely chopped cilantro then mix rice well to distribute the flavors evenly.
- Taste the cilantro lime rice and adjust the seasoning if needed. You can add more salt or lime juice according to your preference.
🪄 Tips and Tricks
- Rinse your rice before adding to the rice cooker. Rinsed rice removed excess starch to prevent the rice from sticking to each other.
- This is a filling and healthy option for babies and toddlers. For BLW, it can be difficult for babies to pick up grains of rice on their own. Spoon-feeding, in this case, is a great option.
- Discard cilantro stems when cutting cilantro. They don’t have much flavor and don’t have a great texture.
🗒 Substitutions
- Use any rice. I used long-grain rice but basmati rice, jasmine rice or brown rice work too.
- Use avocado oil in place of olive oil.
🗒 Best served with
- Your favorite Mexican food: black beans, tacos, burritos and burrito bowls.
- Chicken Tenders and Crispy Cauliflower Nuggets.
👝 How to Store Leftovers
Store leftovers in an airtight container in the fridge for up to 4 days.
