Avocado Chicken Rollies
Such a simple and easy lunch or dinner idea for the whole family to enjoy! Prep the Slow Cooker Shredded Chicken (recipe found in my ebook) in advance or sub with another protein like cooked ground turkey or ground beef. You could also use the Salsa Chicken recipe (also found in the ebook) for deliciousness!
For this, I only use the Siete brand almond flour tortillas. They don’t have any questionable ingredients in them, which I love! Serve with side of fruit and you’re all done.
To store, keep in glass container in fridge for up to 3 days.
To reheat, put in oven under low broil for a few minutes, microwave for 20 – 30 seconds, or heat over medium high in pan with avocado oil until warm (about a minute).
Ingredients
- 1 almond flour tortilla I use Siete brand
- 3 avocado slices
- 1/3 cup shredded chicken
- avocado oil spray
- 1 tbsp shredded cheese
Instructions
- On single piece of tortilla, add slices of avocado and smear to cover about 1/3 of only one side of the tortilla.
- Add shredded cheese on top of smashed avocado smear. Top with shredded chicken.
- Holding the end of the tortilla with all of the ingredients, carefully roll towards other end of tortilla.
- In a pan over medium high heat. spray avocado oil to pan then add rolled tortilla with flap side down. Let it heat for a minute or two then flip to other side.
- Remove from pan and cut into 1 to 2 inch bite sized pieces.
