If you’ve never paired fresh red apples and orange sweet potatoes you’re seriously missing out. This apple and sweet potato hash is one of my personal favorites. The combo of these two sweet foods, mixed with savory fresh herbs, is the perfect way to enjoy these seasonal favorites. 

The apples caramelize in the oven for a perfect sweetness that compliment the roasted sweet potatoes. It’s an easy meal to throw together with simple yet rich flavors. I have yet to meet a person who didn’t love it!

Have it for breakfast, lunch, dinner or as a side dish. Or be like me, and creep down the stairs at midnight to enjoy this sweet and savory treat when the house is finally quiet!

Pair it with crispy bacon, an over easy egg, chicken sausage or as a vegetarian meal. There’s no right way to enjoy this apple breakfast hash. Each way is amazing!

👩‍🍳 How to Make Apple and Sweet Potato Hash

  1. Preheat oven to 400 degrees F.
  2. On a baking sheet layered with parchment paper, add diced apples and sweet potato.
  3. Add all of the seasonings to the baking sheet and drizzle oil all over. Using your hands or tongs, toss the apple and sweet potato mixture to completely cover with seasonings and oil. Arrange in a single layer.
  4. Set baking sheet in oven and roast sweet potatoes and apples for 20 to 25 minutes.
  5. Remove from oven and check to see they’re fork tender to your liking. Enjoy!

🪄 Tips and Tricks

  • Make sure diced sweet potatoes are all the same size to ensure an even cook. I prefer to cut them into bite-sized pieces.
  • For babies aged 6 months to 9 months, cut the pieces into longer finger-length sized pieces.
