Sweet Potato Breakfast Bowls 2 Ways (Sweet or Savory)

The next time you find yourself bored of breakfast, let this healthy bowl bring you back to food paradise. We can thank the sweet potato for getting us there.

Sweet potatoes are THE BOMB. They’re filling, incredibly healthy, and go with just about anything, making them the perfect way to switch up a mundane morning routine.

There are two ways to make these sweet potato breakfast bowls: sweet or savory.

Both bowls require a base of roasted sweet potato. From there, add your favorite ingredients, depending on your idea of the perfect bowl.

My favorite way? For the savory breakfast bowl: sweet potatoes, egg, avocado, spinach, bacon or sausage and salsa. For the “sweet” sweet potato bowl: sweet potatoes, Greek yogurt, honey,  granola, berries and nuts. The sky is the limit, so make these bowls how YOU want them.

Ingredients

Roasted Sweet Potato

  • Sweet Potato
  • Olive Oil 
  • Garlic Powder
  • Salt
  • Black Pepper

Savory Bowl

  • Roasted Sweet Potato
  • Whole Egg
  • Avocado
  • Spinach
  • Bacon or Sausage 

Sweet Bowl

  • Roasted Sweet Potato
  • Greek Yogurt
  • Honey or Maple Syrup
  • Granola
  • Fresh Berries
  • Nuts

👩‍🍳 How to Make Sweet Potato Breakfast Bowls:

  1. Preheat your oven to 400°F (200°C).
  2. Toss the diced sweet potatoes in olive oil, garlic powder, black pepper, and salt.
  3. Spread the sweet potatoes on a baking tray in a single layer.
  4. Roast in the preheated oven for about 20-25 minutes or until the sweet potatoes are tender and slightly caramelized, stirring halfway through.
  5. In a serving bowl, add 1/2 cup roasted sweet potatoes then assemble to your liking of savory or sweet bowl toppings.

🪄 Tips and Tricks

  • I always buy large sweet potatoes and peel and dice them myself but to save on time, buy them pre-cut and cubed.
  • One medium sweet potato will make two bowls. Make extra of your sweet potato base to have for the week so you can assemble fresh bowls every day. Each time, top with your favorite things. You’ll have a totally unique and different bowl every day.
  • Sweet potatoes are perfect for BLW. Serve the roasted sweet potatoes on their own to babies 6 months and older.


🗒 Substitutions

  • Use dairy-free yogurt, such as coconut milk yogurt, in place of Greek yogurt.
  • Make a vegetarian tofu scramble by omitting the meat and adding tofu to your savory bowl.

👝 How to Store Leftovers

Store leftover sweet potatoes in an airtight container in the fridge for up to 4 days. This a great meal to meal prep and have for the week!

Are these dairy and gluten-free?

The sweet potato base is both dairy and gluten-free. However, make sure your toppings are free of gluten and/or dairy. For the sweet bowl, be sure to use a dairy-free yogurt.

  • 1 Tablespoon chopped nuts walnuts, almonds, pecans
  • optional: chia seeds, shredded coconut, drizzle of nut butter
