Gluten Free Baked French Toast Casserole
Whether it’s Sunday brunch, Christmas morning or just another Tuesday, I love making breakfasts we can all eat together. Coming from a family where many follow a gluten-free diet, I’m always trying to find meals that include everyone. This gluten-free french toast casserole is everything I hoped it would be.
This brunch recipe has all the warming flavors you’d expect from French toast: notes of vanilla, nutmeg, cinnamon and pure maple syrup. This casserole has a golden brown, crispy outside and soft, creamy inside.

- Preheat your oven to 350°F.
- Grease a 9×13-inch baking dish with butter or a dairy-free alternative.
- Arrange the loosely chopped bread cubes in the greased baking dish. You can overlap them slightly to fit, if needed.
- In a large bowl, whisk together the eggs, milk, maple syrup, vanilla extract, ground cinnamon, ground nutmeg, and salt.
- Pour the egg and milk mixture evenly over the slices of bread, making sure all the bread is soaked. You may gently press down on the bread slices to help them absorb the mixture.
- Let the mixture sit for about 15-20 minutes to allow the bread to absorb the liquid.
- Place the baking dish in the preheated oven and bake for 25-30 minutes, or until the French toast is puffed, golden brown, and set in the center.
- Remove the gluten-free baked French toast from the oven and let it cool for a few minutes before serving.

- Make sure your baking dish is properly greased. I like to use slightly melted butter on a paper towel to coat the dish. Make sure to get the sides to prevent anything from sticking.
