These pancakes are made from your favorite boxed pancake mix. Mix in a few simple ingredients like eggs, milk, butter and vanilla and you have homemade pancake mix that creates perfect, fluffy pancakes. Add your own toppings, bake in the oven, cut and serve.
I love making these sheet pancakes for special occasions. I have a bunch of cookie cutters and the entire family has fun cutting out shapes. Use the leftover scraps for snacks throughout the week.

👩🍳 How to Make Sheet Pan Pancakes from Mix:
- Preheat your oven to 425°F (220°C). Grease a baking sheet with cooking spray or butter.
- In a large bowl, whisk together the pancake mix, milk, eggs, melted butter or oil, and vanilla extract (if using). Mix until the batter is smooth.
- Pour the pancake batter onto the greased sheet pan, spreading it out evenly with a spatula.
- Sprinkle your favorite toppings evenly over the pancake batter. This can include berries, chocolate chips, or any other desired additions.
- Bake in the preheated oven for about 12-15 minutes or until the edges are golden brown, and the center is set.
- Remove pan from oven and allow the sheet pan pancake to cool for a few minutes in the pan. Then, use a knife or pizza cutter to slice it into squares or rectangles.
- Serve the sheet pan pancakes warm with your favorite toppings, such as maple syrup, greek yogurt, or additional fresh fruit.
🪄 Tips and Tricks
- Because we add the milk, eggs, vanilla and butter, the mix you use really doesn’t matter. I make these when I find a boxed mix I don’t particularly love because all the add-ins ensure the end result will be delicious pancakes.
- Purchase fun cookie cutters or shapes. We even use letter and number cut outs to make this not only fun, but educational.
- If you have multiple kids, give each one a section to add their own toppings.

👝 How to Store Leftovers
Store leftover pancakes in an airtight container in the fridge for up to three days. You can also freeze for up to three months in a freezer bag. Remove frozen pancakes and reheat in a toaster oven.
🤔 Common Questions
These are gluten-free if you use a gluten-free pancake mix. Make sure any toppings are free of gluten, as well.
To make dairy-free, omit the milk and replace with a plant-based alternative. Instead of butter use vegetable oil, olive oil or coconut oil. Make sure toppings have no dairy.
