Gluten-Free Chorizo Frittata with Spinach and Tomato

This chorizo frittata was inspired by an empty fridge, consisting of eggs, chorizo and a few veggies. So much flavor came from a simple few ingredients and the whole thing took less than 10 minutes to throw together.

Ok, back to business. Ground chorizo sausage, eggs, spinach and tomato may sound simple, but this hearty breakfast is anything but boring. Everything But the Bagel Seasoning adds that little extra somethin’, so I wouldn’t skip it.

If you’re not familiar with chorizo, you should be aware it’s got a little kick to it. You can purchase Spanish chorizo or Mexican chorizo and they’re going to taste a little different but either type of sausage works for this recipe.

👩‍🍳 How to Make Chorizo Frittata

  1. Preheat oven to 400 degrees. Whisk eggs in a large bowl and set aside.
  2. Heat large pan over medium-high heat and cook chorizo until brown (about 5 minutes).
  3. Once fully cooked, add peppers to pan and sauté together with drippings from chorizo for a couple of minutes. Set pan aside.
  4. Spray casserole dish with avocado oil, or any nonstick oil, and add chorizo mixture to pan. Add tomatoes and spinach to pan and stir everything together.
  5. Pour whisked eggs into the dish then transfer to oven to bake for 20 minutes, or until the egg has completely set.
  6. Allow to cool slightly before slicing into 8 rectangular pieces. Top with everything but the bagel seasoning and serve.

🪄 Tips and Tricks

  • Cook this in a cast iron skillet and transfer directly into the oven from the stove. Using a cast iron pan not only saves you from having to do extra dishes but also gives the eggs a nice crisp, especially if you add cheese.
  • Chorizo is typically spicy so be cautious when serving to toddlers and kids. It’s also high in fat and may be heavy on little tummies so serve to 12 months and older.

  • Add cheese, if desired. Monterey Jack cheese, mozarella or sharp cheddar cheese are wonderful. Add before baking in the oven and watch to ensure cheese doesn’t burn.

  • Black beans, sour cream, or green onions.
  • I’m a carb gal and love a sweet and salty combo, so I usually serve this with a side of Cinnamon Apple Waffles or Sweet Potato Hash, especially if I’m serving a lot of people.

Store leftover in an airtight container in the fridge for up to four days or in the freezer for up to three months. Cut into individual servings prior to refrigeration to make meal prep easy.
