Mini Pancake Bites

When you’re in the mood for a sweet breakfast, what’s better than fluffy pancakes? I always make sheet pan pancakes or mini banana pancakes but lately, these mini pancake bites are my favorite go-to recipe. Made from only bananas, milk and flour, it’s quick, easy and healthy.
So, what are they? They’re basically little stuffed pancakes in muffin shape. You make the batter, add it to a muffin tin, add your favorite fun toppings and bake.
A word about the toppings… the sky is the limit! There’s so many different things you can add. We go wild for peanut butter, mini chocolate chips, fresh blueberries, sprinkles, etc. Each person adds their own favorite goodies to their mini muffin and everyone is happy.

👩🍳 How to Make Pancake Bites
- Preheat oven to 350. Grease mini muffin tin with cooking spray.
- Add bananas to a medium bowl then mash with a fork.
- Mix flour, milk, and baking powder in with the banana. Stir until well combined and smooth.
- Using a small kitchen scoop, pour pancake batter into the mini muffin tin, filling it 3/4 of each hole.
- Add favorite toppings on top.
- Cook in the preheated oven for 15 mins or until golden brown.
- Remove from oven then let cool. Serve and enjoy.
