Pancake Bites

These Pancake Bites are like mini pancake muffins with only 5 minutes of prep. Mix up a simple pancake batter, add to a muffins tin with your favorite pancake toppings and bake. This easy breakfast idea can be individually customized with different flavors for the whole family.

Ingredients

  • 2 ripe bananas mashed
  • 2 cups whole milk
  • 2 cups all purpose flour or 1:1 gluten free baking flour
  • 2 teaspoons baking powder

Optional Toppings

  • sausage links chopped
  • peanut butter
  • chocolate chips blueberries
  • raspberries
  • strawberry jam

Instructions

  • Preheat oven to 350. Grease mini muffin tin with nonstick spray. 
  • Add bananas to a large bowl then mash with a fork.
  • Mix flour, milk, and baking powder in with the banana. Stir until well combined and smooth.
  • Pour batter into the mini muffin tin, filling it 3/4 of each hole.
  • Add favorite toppings on top. 
  • Cook in the oven for 15 mins. 
  • Remove from oven then let cool. Serve and enjoy.
