Air Fried Keto Scotch Eggs

This one is a real winner that I’m super proud of and know you’ll enjoy as well! Serve as breakfast, brunch or a high protein snack! The first time I ever had a scotch egg was from a restaurant in Jackson Hole, Wyoming and ever since then I’ve been on the lookout to no success. I took matters into my own hands and decided to recreate that beautiful masterpiece but in a healthier way! This recipe turns out so crispy and perfect from the pork rinds. Air Fried Keto Scotch Eggs

- 1 cup
almond flower
- 1 bag
pork rinds
- 12
eggs
- 1 tbsp
thyme
- 1 tbsp
garlic powder
- 1 tbsp
sage
- 1 tsp
salt
- 1 tsp
pepper
Directions
In a food processor, blend up the pork rinds into a smooth breadcrumb like texture.
Put eggs into a pot of boiling water for 8 minutes.
Immediately after, put them into an ice bath for one minute.
Peel the eggs.
Mix ground pork with spices and leave in mixing bowl.
Take a peeled egg and roll around in almond flour.
Grab a small handful of ground pork mixture and roll out to flatten.
Put egg in middle of flatten pork mixture and wrap around the egg until everything is covered.
Roll around in pork rind crumbs then set aside.
Once done with all eggs, put in air fryer at 400 degrees for 10 minutes.
Let cool for a few minutes then cut in half with knife.
Top with Everything but the Bagel seasoning and serve!
