I love cooking with bison because it’s less gamey and a leaner meat than others. American bison has fewer calories and fat than ground beef making these a healthier alternative to classic meatballs.

- In a large mixing bowl, add ground bison, apple sauce, almond flour and egg.
- Gently combine ingredients. Be careful to not over-mix, as this can make the meatballs tough.
- Shape the mixture into meatballs, about 1 to 1.5 inches in diameter. You should get approximately 16 – 20 meatballs.
- Air fry: place in air-fryer at 390 degrees for 12 minutes.
- Oven Baked: place uncooked meatballs on a parchment paper-lined baking tray in oven at 400 degrees for 20 minutes.

- The best way to mix the meatball mixture is with your hands. However, mix only until combined or you’ll risk making the meatballs tough and chewy.

- Any ground meat: ground beef, ground chicken or ground turkey.
- Add your favorite fresh herbs to the meatball mixture. Make an Italian seasoning homemade blend of spices with fresh basil, garlic powder, onion powder, salt and black pepper. These will be more like traditional Italian meatballs.
- Use breadcrumbs in place of almond flour.
