Easy Creamy Beet Pasta Sauce (Add Preferred Noodle)

Beet lovers, unite! This creamy beet pasta sauce is cheesy, healthy and has a gorgeous pink color. Does homemade pasta sauce get any better than that?

Beets don’t just make a beautiful dish (what other vegetable makes such a vibrant pink?!) but they have also have a ton of health benefits. Filled with antioxidants that help support brain, heart and digestive systems, these little roots are almost too good to be true.

Earthy and sweet, there are tons of delicious ways to prepare beets. For this recipe, we’re using our beloved beets to make a bright pink pasta sauce, perfect for Valentine’s Day or for babies and toddlers drawn to vibrant, beautiful colors.

👩‍🍳 How to Make Beet Pasta Sauce

  1. Cook favorite pasta of choice according to package directions until al dente. Reserve 1/2 cup pasta water then drain the pasta and set aside in pot.
  2. In a food processor or high-speed blender, combine beets, olive oil, garlic powder, ricotta cheese, parmesan cheese, salt and pepper and blend until smooth. Add a few tablespoons of pasta water to make more creamy.
  3. Pour the beet pasta sauce over the cooked pasta, along with a few more tablespoons of pasta water, and stir well to combine. 
  4. Garnish with more parmesan cheese and any fresh herbs that you’d like and enjoy.

👝 How to Store Leftovers

Store leftover pasta sauce in an airtight container in the fridge for up the three days. I suggest storing cooked pasta and sauce separately or just making pasta as needed.

Is this gluten-free?

For gluten-free, use gluten-free pasta.

How to make dairy-free?

To make dairy-free, use non-dairy ricotta and omit the parmesan cheese. Nutritional yeast is a great substitute for parmesan cheese. Note, these substitutions will change the texture of your sauce.

How do I cook beets?

Clean beets and remove the stem and skin. Place in a large pot and bring to a boil. Cook until fork tender, depending on size of beet, anywhere from 25-60 minutes.
