Easy Chicken Pasta with Creamy Avocado Sauce

Photos by Marie-Catherine Dubé

Every night could be pasta night at my house and this chicken and avocado pasta is one of my favorites. This pasta dish is yummy, healthy and a great way to get picky kids to eat avocado.

The creamy sauce is the star of the dish. Made with avocado, lemon juice, olive oil and fresh herbs, this sauce is simple but packs a lot of flavor. Using an avocado is the perfect way to make a cream sauce without needing sour cream or heavy cream.

Add chicken, your favorite pasta noodle, pour the homemade sauce over and give it a toss. You have a perfect dinner, ready in 20 minutes, making busy nights a little easier. If you’re really pressed for time, use pre-cooked shredded chicken.

If you’re on a pasta kick try my Pasta in a Creamy Mushroom Sauce or Almond Butter Noodles.

👩‍🍳 How to Make Chicken and Avocado Pasta

  1. In a food processor, add 1/4 cup olive oil, avocado, basil leaves, garlic, and juice of 1/2 lemon and blend until smooth. Set avocado sauce aside.
  2. In a large skillet, heat 1 tablespoon of olive oil over medium-high heat. Add the bite-sized pieces of chicken and season with garlic power and black pepper. Cook until browned and cooked through, about 3-4 minutes per side.
  3. In the same skillet, add cooked pasta, cherry tomatoes, avocado sauce and grated parmesan cheese and cook for an additional 2-3 minutes to toss everything together until well combined.
  4. Adjust the seasoning with salt and pepper to taste and garnish with grated Parmesan cheese and more fresh basil if desired.

🪄 Tips and Tricks

  • Use rotisserie chicken or already cooked chicken to save on time.
  • Make sure to use a ripe avocado. You will know it’s ripe when it’s lightly soft but not mushy. The skin will indent with a firm but gentle squeeze.
  • Serve cold to make into an avocado pasta salad.
  • This is one of my favorite pastas for BLW because avocado is so good for you. Serve as is.

🗒 Variations

  • Add red pepper flakes for some heat.
  • Instead of pasta noodles, add the creamy avocado sauce to zucchini noodles or spaghetti squash noodles.

🗒 Substitutions

  • Add your favorite vegetables such as bell pepper, green onion or fresh spinach.
