Quick Ground Beef Stir Fry with Ramen Noodles
The next time you need a quick dinner and are tempted to order takeout, try these ground beef stir fry noodles instead. They have so much flavor with just a few simple ingredients.
With crispy fresh veggies, juicy ground beef, ramen noodles and an easy homemade sauce made from just sesame oil and coconut aminos, it’s much healthier than ordering out and just as satisfying.
I used the veggies I had from the fridge but add your favorite stir fry veggies and noodles. I love getting a wide variety of colors in my stir fry. Not only does it look beautiful, I love knowing how healthy it is!
These are also great for meal prep. I make the veggies and meat mixture ahead of time because it makes enough for four meals. When I’m ready to eat, I quickly cook some ramen and add it to the pre-made veggie/meat mixture. So easy, so delicious.

👩🍳 How to Make Ground Beef Stir Fry Noodles:
- In a large skillet or large wok over medium-high heat, add ground beef and cook until completely done (about 3 – 5 minutes).
- Place a piece of paper towel on top of a plate and set cooked ground beef on top to soak in the extra fat. Use another piece of paper towel to absorb most, but not all, of the fat left in the cooking pan.
- Add onion, zucchini, orange pepper, carrots, garlic powder and black pepper in the same pan and stir together for about 2 minutes or until the onion is translucent.
- Turn down the heat to low and add the ground beef back to the pan, along with sesame oil and coconut aminos. Stir for another minute.
- **OPTIONAL: Remove about 3/4 of the ground beef and vegetable mixture from pan into a glass storage container to use another day. If not, add 3 more cooked ramen cakes (4 total).
- Add cooked and rinsed ramen to pan and stir together until ramen is well combined with sauce.
🪄 Tips and Tricks
- For a single serving of ramen, buy the cheap packets of instant ramen noodles and toss the seasoning packet.
- The veggies and meat quantities are enough for 4 servings. Add three more ramen cakes to make this a family meal. For a single serving, use only one ramen cake and save 3/4 of the meat and veggie mixture.
