Pork udon noodles is a simple Asian-style dish with lots of flavor, protein and vegetables. Udon noodles are thick, chewy noodles and with the combination of the pork and sauce, it all comes together so nicely. This recipe has many variations and comes together in less than 20 minutes.
Ingredients and substitutions
- Ground pork – I like to use ground but you could also use pork belly, chop or boston butt cut into small pieces
- Ginger – I like to use ground ginger but you may use minced
- Garlic – I like to use garlic powder but you may use minced
- Black pepper
- Zucchini – I love the addition of zucchini in this recipe but you can swap for other vegetables such as broccoli, carrots or mushrooms
- Onion – I like to use yellow onion but you may use white
- Udon noodles – I like to use the dry packages found in grocery stores but frozen and fresh noodles are also available in some places
- Sesame oil
- Coconut aminos – I like to use coconut aminos instead of soy sauce so there’s not as much of a salty taste but you could swap for that

How to make pork udon noodles
- Fill a pot with water and cook udon noodles according to directions on packaging. Set aside.
- In a large pan over medium-high heat, add the pork. Season with ground ginger, garlic powder, and black pepper and cook, stirring frequently. Use a slotted spoon to break the meat apart and cook until browned, about 5 to 7 minutes.
- Once most of the ground pork is cooked, add zucchini and onion to pan and stir together.
- Lower the heat to a simmer and add cooked udon noodles, sesame oil, and coconut aminos to the pan and stir constantly for another 1 to 2 minutes.
- Garnish with sesame seeds and scallions and enjoy.
