Pork Udon Noodles

Ingredients

  • 1 lb ground pork
  • 1/8 tsp ground ginger
  • 1/4 tsp garlic powder
  • 1/8 tsp black pepper
  • 1 large zucchini chopped
  • 1 medium yellow onion chopped
  • 5.5 ounces udon noodles 152 grams or about 2 ribbons
  • 1/8 cup sesame oil
  • 1/4 cup coconut aminos
  • 1/2 tbsp sesame seeds optional

Instructions

  • Fill a pot with water and cook udon noodles according to directions on packaging. Set aside.
  • In a large pan over medium-high heat, add the pork. Season with ground ginger, garlic powder, and black pepper and cook, stirring frequently. Use a slotted spoon to break the meat apart and cook until browned, about 5 to 7 minutes.
  • Once most of the ground pork is cooked, add zucchini and onion to pan and stir together.
  • Lower the heat to a simmer and add cooked udon noodles, sesame oil, and coconut aminos to the pan and stir constantly for another 1 to 2 minutes.
  • Garnish with sesame seeds and scallions and enjoy.
