Fill a pot with water and cook udon noodles according to directions on packaging. Set aside.
In a large pan over medium-high heat, add the pork. Season with ground ginger, garlic powder, and black pepper and cook, stirring frequently. Use a slotted spoon to break the meat apart and cook until browned, about 5 to 7 minutes.
Once most of the ground pork is cooked, add zucchini and onion to pan and stir together.
Lower the heat to a simmer and add cooked udon noodles, sesame oil, and coconut aminos to the pan and stir constantly for another 1 to 2 minutes.
Garnish with sesame seeds and scallions and enjoy.
