Creamy Pasta with Mushrooms

If you’re a mushroom lover, this one is for you! This is a great recipe for little ones because the creamy parmesan sauce has no heavy cream or whole milk.

Made with only butter and Parmesan, it’s light and easy on growing bellies but still decadent and flavorful. Shiitake mushrooms have a rich buttery flavor, making them a perfect compliment to the creamy pasta sauce.

👩‍🍳 How to Make Creamy Mushroom Pasta

  • Cook pasta in a large pot according to directions on box. When done, drain pasta water except leaving about 1/8 cup left in pot. Set reserved pasta water and pasta aside.
  • Heat medium sized pan over medium-heat and add olive oil, onion and mushrooms. Add black pepper and garlic powder and sauté for a couple of minutes or until translucent.
  • In the pot with cooked pasta, add mushroom and onion mixture, butter and grated parmesan.
  • Stir together for another two minutes until pasta looks creamy and cheese has melted.

🪄 Tips and Tricks

  • Make sure to clean your fresh mushrooms very well to remove all the excess dirt. Dry them on a paper towel prior to cooking.
  • Cook pasta only until al dente. The pasta will cook more while sitting in the pasta cooking water, even with the heat off.

  • Mushrooms: There are a variety of mushrooms to choose from. If you want meaty mushrooms opt for portobello mushrooms. For a light mushroom, choose white button mushrooms. Cremini mushrooms or baby Bella mushrooms are also good options.
  • Pasta: I used brown rice pasta, but any is great!

Do I have to use Shiitake mushrooms?

Use any mushrooms you love! When cooking for little ones, keep in mind white button mushrooms are lighter in the mushroom flavor so are a good place to start when introducing mushrooms.

Can this be made gluten free?

Yes! Just use gluten free pasta such as chickpea, rice or quinoa pasta.
