Kiss those golden arches goodbye. This sausage breakfast sandwich is every bit as tasty but made with simple ingredients and will leave you feeling good and ready to take on the day.

This egg breakfast sandwich is a great choice when you want something hearty and filling but don’t necessarily want to serve your family fast food. Or simply when you don’t feel like leaving your house on lazy Saturday mornings. 

This quick breakfast can be made with eggs anyway you like them. I go for scrambled because those are easiest for my son to eat. Try with a fried egg or over easy with a runny yolk. Add in some ooey gooey cheese and you have a breakfast sandwich recipe that gives the local diner a run for their money.

👩‍🍳 How to Make Sausage Breakfast Sandwiches:

  1. In a nonstick skillet over medium heat, cook the sausage patties until they are browned and cooked through. Follow the package instructions or cook for about 4-5 minutes per side.
  2. While the sausages are cooking, prepare the eggs. In a bowl, beat the eggs and season with salt and pepper. Scramble the eggs in a skillet over medium heat until cooked to your liking.
  3. In the last minute of cooking the eggs, place a slice of cheese on each egg to allow it to melt. 
  4. Toast the English muffins in a toaster oven or on a griddle with a little butter or avocado spray until they are golden brown.
  5. Place a cooked sausage patty on the bottom half of each toasted English muffin.
  6. Top the sausage with the cheesy scrambled egg and add any optional toppings like sliced tomatoes, avocado, or greens. Complete the sandwich with the other half of the toasted English muffin.

🪄 Tips and Tricks

  • This recipe makes 4. If you only need to make one or two, wrap the extras in parchment paper then aluminum foil and freezer in airtight bag for up to three months. Thaw overnight then reheat in oven.

  • Make your egg sandwiches with any type of egg: fried, over easy for runny egg yolks or scrambled.
  • Any cheese of choice: American cheese, Swiss, mozzarella or cheddar cheese.
  • Use turkey sausage or crispy bacon.

👝 How to Store Leftovers

Store leftovers in an airtight container in the fridge for up to 3 days. Reheat in the toaster oven.
