Sausage Breakfast Sandwich

Ingredients

  • 4 sausage patties or links
  • 4 large eggs
  • salt and black pepper to taste
  • 4 slices cheese (cheddar, American, Swiss or your favorite)
  • 4 English muffins split and toasted
  • butter or avocado spray for toating

Optional Toppings

  • sliced tomatoes
  • avocado slices
  • spinach or arugula leaves
  • hot sauce or ketchup

Instructions

  • In a nonstick skillet over medium heat, cook the sausage patties until they are browned and cooked through. Follow the package instructions or cook for about 4-5 minutes per side.
  • While the sausages are cooking, prepare the eggs. In a bowl, beat the eggs and season with salt and pepper. Scramble the eggs in a skillet over medium heat until cooked to your liking.
  • In the last minute of cooking the eggs, place a slice of cheese on each egg to allow it to melt. 
  • Toast the English muffins in a toaster oven or on a griddle with a little butter or avocado spray until they are golden brown.
  • Place a cooked sausage patty on the bottom half of each toasted English muffin.
  • Top the sausage with the cheesy scrambled egg and add any optional toppings like sliced tomatoes, avocado, or greens. Complete the sandwich with the other half of the toasted English muffin.
