Season the diced sirloin steak with salt and pepper.
Add 1 tbsp olive oil or butter to wok and heat on high heat. When wok is heated, add steak and cook for 2-4 minutes, or to desired doneness. Avoid over-cooking. Remove from wok and set aside on another plate.
In the same wok, add remaining olive oil or butter then cook onion, garlic, and frozen mixed vegetables for 1-2 minutes, or until softened.
Add rice and steak back into wok and stir. Add soy sauce and sesame oil and fold the rice to combine all ingredients.
Create a hole or nest in middle of wok and crack two eggs into wok. Break the yolk and scramble egg. Stir and let it cook for about a minute. Add more soy sauce if you'd like.
Remove fried rice from heat. Garnish with green onions and sesame seeds, if desired. Serve and enjoy immediately.
