Ingredients

  • 1 lb. sirloin steak diced
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon kosher salt
  • 2 Tablespoons olive oil or butter
  • 1 small onion diced
  • 1 Tablespoon garlic minced
  • 1 cup frozen mixed vegetables (peas, corn, carrots)
  • 2 cups cooked jasmine rice or short grain rice (day-old preferred)
  • 2 large eggs
  • 2 Tablespoons soy sauce
  • 1 Tablespoon sesame oil
  • 2 green onions chopped
  • sesame seeds optional
  • chili crisp optional

Instructions

  • Season the diced sirloin steak with salt and pepper.
  • Add 1 tbsp olive oil or butter to wok and heat on high heat. When wok is heated, add steak and cook for 2-4 minutes, or to desired doneness. Avoid over-cooking. Remove from wok and set aside on another plate.
  • In the same wok, add remaining olive oil or butter then cook onion, garlic, and frozen mixed vegetables for 1-2 minutes, or until softened.
  • Add rice and steak back into wok and stir. Add soy sauce and sesame oil and fold the rice to combine all ingredients.
  • Create a hole or nest in middle of wok and crack two eggs into wok. Break the yolk and scramble egg. Stir and let it cook for about a minute. Add more soy sauce if you'd like.
  • Remove fried rice from heat. Garnish with green onions and sesame seeds, if desired. Serve and enjoy immediately.
