Ingredients

Sweet Potatoes

  • 1 medium sweet potato peeled and diced
  • 1 Tablespoon olive oil
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon salt

Savory Bowl

  • 1 whole egg scrambled
  • 1/2 avocado diced
  • 1/2 cup spinach
  • bacon or sausage
  • optional: cilantro, salsa, hot sauce

Sweet Bowl

  • 1 cup Greek yogurt or dairy-free alternative
  • 1 Tablespoon honey or pure maple syrup
  • 1/2 cup granola
  • 1/4 cup fresh berries blueberries, strawberries. raspberries, etc
  • 1 Tablespoon chopped nuts walnuts, almonds, pecans
  • optional: chia seeds, shredded coconut, drizzle of nut butter

Instructions

  • Preheat your oven to 400°F (200°C).
  • Toss the diced sweet potatoes in olive oil, garlic powder, black pepper, and salt.
  • Spread the sweet potatoes on a baking sheet in a single layer.
  • Roast in the preheated oven for about 20-25 minutes or until the sweet potatoes are tender and slightly caramelized, stirring halfway through.
  • In a serving bowl, add 1/2 cup roasted sweet potatoes then assemble to your liking of savory or sweet bowl toppings.
