This Week’s Meals: Let’s See What We Can Do in 1.5 Hours

Happy Monday! I hope everyone is off to a fantastic start this week.

Arriving home late afternoon on Sunday left me with limited time for my usual Sunday meal prep. I had to multitask and utilize multiple appliances simultaneously to make the most of my time! With the oven, rice cooker, and stove top all in action, I also managed to whip up a delicious snack to store in the freezer (more details below).

In one and a half hours I was able to cook up five different meals!

This week’s meal prep lineup includes a snack, protein, starch, soup, and a breakfast item. These five essentials will be a lifesaver throughout the week whenever I’m pressed for time!

Here’s what’s on the menu for this week:

1. Chicken Noodle Soup (GF)

I substituted chicken breast/thigh for ground chicken to have chicken meatballs in the soup! It’s such a simple and nourishing soup that the whole family loves that I make this frequently.

2. Hashbrown Casserole

Just one of those no-recipe recipes that I put together with what I had in fridge and freezer! Here is everything that went in:

  • 1 cup frozen hashbrowns
  • 3 links of Bilinski’s chicken sausage
  • 1/2 cup red pepper, diced
  • 1 cup colby jack cheese, shredded
  • 8 eggs, whisked

Bake in oven at 375 degrees for 35-40 minutes or until the middle is completely set.

3. Frozen Banana Yogurt Bark

This recipe came together because I had two ripe bananas I had to use and I didn’t want to make banana bread. Instead, I layered two cups of greek yogurt on a baking sheet and spread banana coins evenly across. I topped with maple syrup and flax seeds and put the baking sheet in the freezer for 1.5 hours! Break apart when frozen and enjoy these delicious yogurt treats.

4. Baked Chicken

This is a super simple way to cook chicken with no thought. I seasoned 2 pounds of chicken breast with:

  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp kosher salt
  • 1/2 tsp black pepper
  • 1/2 tsp smoked paprika

Lay evenly spaced on baking sheet and bake in oven at 375 degrees for 30 minutes or until internal temperature reaches 165 degrees!

5. White Rice

I love having white rice on hand as an extra side for meals throughout the week or to make fried rice with ingredients I need to use by end of the week!

Other things I have ready for the week are:

  • Banana chips
  • Bananas
  • Sumo oranges
  • Cottage cheese
  • Steamed broccoli
  • Hummus
  • Oven roasted chicken deli meat
  • Cheddar cheese
