Potato Cakes
If you find yourself with leftover mashed potatoes or just want to make a super easy baby led weaning recipe- this is for you! If you don’t have a waffle maker, you can just do it in a pan over stove top but the waffle maker makes it soooo easy! You can top with some guac or pasta sauce to make it more filling or serve as a side with protein and veggies! Store in a glass container for the week or freeze for up to 3 months!

- 2 cups
mashed potatoes
- 1
egg
- 1/4 cup
grated parmesan
Directions
Mix all ingredients together in bowl until well combined.
Spray waffle maker with nonstick spray and put about ⅓ cup of potato mixture into waffle maker. Close lid until cooked to your liking.
