Beet Pesto Pasta for Babies and Toddlers

Y’all know my love for beets and how I think it’s so underrated so it was soon enough that I introduced it to my boy! Eller tried beets for the first time today in this super simple and yummy beet pesto pasta dish! This really could be used as a dip or a spread in a sandwich as well. I made a simple turkey, lettuce and tomato sandwich for lunch and it was for sure ✨leveled up✨ with the beet pesto. So light and perfect for summer. For Eller, I used @eatbanza chickpea pasta to give him a little more protein! He LOVED it and ate it all up.

    Ingredients

    • juice of one lemon

    • 1 cup

      pine nuts

    • 1/2 cup

      grated parmesan

    • 2

      garlic cloves

    • 1/4 cup

      water

    • 3 tbsp

      olive oil

    • 3 or 4

      cooked beets (I like Love Beets brand)

    Directions

    • Blend it all up together in food processor then mix with cooked pasta!
