What is a Pizzadilla?

A pizzadilla is a quesadilla filled with typical ingredients found on a pizza, such as marinara sauce and cheese.

This recipe came about when I had just gotten home from being out of town and I hadn’t gone grocery shopping yet but it was my toddler’s lunch time.

I looked in the fridge and I had an open jar of Rao’s pizza sauce, some mozzarella and Siete almond flour tortillas. The rest is history and the pizzadilla was born!

It’s a family-friendly lunch or dinner that is fully customizable and fun.

Ingredients and substitutions

  • Tortilla – you may use your favorite type of tortilla but I like to use almond flour tortillas. You may also use pita or naan.
  • Cheese – I like to use mozzarella but ricotta, goat, cheddar, or provolone would all work well
  • Pizza sauce – you can use your favorite jarred pizza or marinara sauce
  • Avocado oil spray – you may use avocado oil, butter, or olive oil
  • (optional) Protein – ground turkey, rotisserie chicken, pepperoni or sausage would all make delicious fillings
  • (optional) Vegetable – you can use any type of vegetables you have on hand such as onions, bell peppers, mushrooms and black olives

How to make Pizzadilla

  1. On a piece of tortilla, sprinkle mozzarella cheese over half of the tortilla.
  2. Using a spoon, spread pizza sauce on top of the cheese.
  3. Top with any other ingredients you may be using then sprinkle the remaining cheese. Fold the tortilla in half.
  4. Coat a medium pan with avocado oil spray over medium to high heat then carefully place the pizzadilla and let it cook until brown.
  5. Carefully flip over and cook until the other side is also brown and crispy, about 1 to 2 minutes. Enjoy immediately.                                 

How to serve and store

The pizzadillas would be complete with a simple salad for the adults and fruit for the kids. These zucchini fries would be a hit with everyone!

Store in an airtight glass container for up to 3 days in fridge. To reheat, place back on a pan for a few minutes until cheese is melted. You can also place in a microwave-safe dish and heat for 30 seconds in the microwave or you can reheat in the air fryer for less than 30 seconds.

  • Can you make this for meal prep? Yes! While this is a great clean-out-the-fridge type of meal, it also makes for a great prep in advance meal.
  • Can I freeze the pizzadillas? Yes! You may freeze in airtight container or bag for up to 3 months.
  • Do I have to use almond flour tortillas? No, you may use any type of tortilla you like. There are various wheat or gluten free options.
